The Maida Farm, with its roots in the history of Magna Graecia in Paestum, produces these Friarelli (broccoli) following the most ancient peasant recipes. The artisanal process begins with a gentle soaking of the broccoli (60%) in vinegar and salt, essential for preparing the vegetable for preservation.

The friarelli are then generously seasoned with the typical flavors of Southern Italy: garlic and chili pepper. They are preserved in high-quality extra virgin olive oil (37%). Maida's secret is the careful heat treatment that ensures optimal preservation of the product in oil, preserving its precious organoleptic characteristics, such as its vibrant color and intense flavor.
