This multi-cultivar blend is born from the harmonious blend of three ancient native varieties: Biancolilla , Cerasuola, and Nocellara del Belice , each selected to contribute its distinctive characteristics to an oil of extraordinary balance and elegance.
Biancolilla: ancient elegance. One of the oldest cultivars in the Italian olive landscape, native to Caltabellotta in the Agrigento province, Biancolilla owes its evocative name to the color the drupes take on during ripening: from the pale green, almost white, of their youth to the wine-red of veraison. Often used as a natural pollinator for other self-sterile varieties, it imparts delicate notes of almond, artichoke, and fresh grass to the oil, with a light, slightly spicy fruitiness that lends freshness and aromatic complexity.
Cerasuola: the strength of the territory. Grown primarily in the provinces of Trapani and Agrigento, Cerasuola is a vigorous and resilient cultivar, known for its high productivity and early ripening.
