Live yeast versus dead beer: the question of pasteurization

All commercial beers are pasteurized to ensure long shelf life and total stability. The problem? Pasteurization kills yeast, disrupts enzymatic processes, and degrades aromatic molecules. A pasteurized beer is literally dead.

Premium craft beers, by regulatory definition, cannot be pasteurized. They remain alive, continuing to evolve in the bottle. It's the acceptance of variability as a value, the celebration of beer as a living product.

The obsessive selection of raw materials

The industry uses rice and corn to increase yields at a low cost. A premium craft brewery uses exclusively selected barley malts, often from specific varieties grown in suitable areas.

Hop selection follows the same philosophy: varieties chosen for their aromatic profile, not standardized extracts. A craft brewer composes with hops like a perfumer with essences.

The Zorzettigs use the water from Monte Mia as it flows, respecting its mineral characteristics that contribute to the unique character of their beers.
