The organoleptic properties of this Carnaroli rice are exceptional: uniform grains with a percentage of breaks far lower than what is allowed by Italian legislation. This in fact provides for a maximum of 5% in broken grains, while Musso rice is below 1%. But the quality of this rice does not end here: the total discrepancies do not exceed 3% while the Italian law between Striati, Macchiati, Gessati, damaged by fermentation and natural discrepancies provides for 20%. This allows for extraordinarily uniform cooking of the beans.
Carnaroli rice from the Musso farm is grown according to traditional and non-invasive methods , through a unique and exceptional link with the geological, environmental and climatic characteristics of the territory, unique conditions that are distinctly different from the rest of the Italian territory.

This product is treated at low temperatures and exclusively with stone . In this way the starch does not undergo variations as it happens in industrial hot processes. Furthermore, the natural whitening by rubbing does not affect the natural shape of the grain, avoiding creating cracks, thus guaranteeing excellent cooking resistance.
Finally, the DOP certification subjects this brown rice to a control and an analysis by the National Rice Authority at all stages of cultivation, harvest and transformation.
The Carnaroli PDO rice is considered one of the best Italian rice. Excellent for cooking resistance in any preparation, it is ideal for fine risottos and special regional dishes. It remains more loose and the grain tends to absorb less the taste of the condiments.

The history of our company begins in the early 1900s, when our ancestors began to grow rice in Vercelli. Then in the sixties, Lorenzo Musso bought part of the Masina farmhouse in the municipality of Carisio and continued his work as a rice farmer here, the company then passed to his son Gian Carlo who enlarged and managed it with the experience inherited from his parents. Today the Musso farm is run by Matteo with the help of his father Gian Carlo and his sister Alessia and together they guarantee the coexistence of tradition and technological innovation. Our company is located at the foot of the Biella Pre-Alps in an area rich in water and an ideal climate for the cultivation of quality rice; rice is followed in its evolutionary path from sowing to cutting, from processing to packaging directly and personally by us; this is a full guarantee of all product manufacturing processes. We also participate in the Integrated Environmental Measurement Cultivation system of the Piedmont Region: this practice requires that the pesticide products that can be used are to be reduced by 50% compared to the allowed, in addition to further improve the ecosystem of the land and use a more natural fertilization possible we sow all over. the farm area is an Autumn / Winter weed that will then be plowed underground in the spring.
