The preparation is meticulous: the chili peppers (60%) are lightly seasoned with vinegar and salt to seal their qualities, then chopped and immersed in low-acid, low-peroxide Extra Virgin Olive Oil (40%) , enhancing their flavor without weighing them down. Preservation is guaranteed by a careful heat treatment, designed to preserve the crunchiness and firmness that are hallmarks of Maida quality. True to ancient peasant recipes and continuous quality controls, the final product is free of colorings, flavorings, or preservatives, offering a spicy and authentic flavor.

How to Use and Pairings in the Kitchen

This preparation based on chopped chili peppers is ideal for adding a note of spiciness and intense flavor to many Mediterranean dishes.

First Courses: Perfect for seasoning spaghetti, linguine or short pasta (e.g. penne all'arrabbiata), just add a teaspoon to the sauce.
