The challenge, as they state, is "to encapsulate the aromas and flavors of freshly harvested vegetables in a preserve."

Giardiniera is made with a colorful and crunchy blend of vegetables (red and yellow peppers, fennel, cauliflower, and carrots). The deliberately simple, hand-crafted process ensures the quality of the ingredients remains intact. The balance of water, vinegar, sugar, and salt creates the classic sweet and sour flavor, just sweet enough to enhance the vegetables and acidic enough to preserve them, without the use of artificial preservatives .
