Martelli noodles are the perfect choice for a fish-based dressing. Produced with artisan care using exclusively Italian wheat semolina and cold water, they are bronze drawn and left to dry slowly and naturally.

Since 1926 the Martelli family has been producing pasta following a precise philosophy: to produce high quality pasta in small quantities.

These Martelli noodles are an artisanal pasta with an excellent consistency and roughness of the pastry, almost an obligatory choice for fish-based sauces.

The final result is an artisanal pasta with an excellent consistency, able to retain moods and aromas of delicate condiments, giving the dish a great harmony of flavor.

We have been producing pasta since 1926, when the brothers Gastone and Guido founded the Pastificio Martelli in Lari, in the center of the Pisan hills, in Tuscany. Since then, thanks to the experience gained over time and the passion for well done things, we are proud to carry on our philosophy: to produce high quality pasta in small quantities. All stages of processing are performed only by members of the Martelli family in order to keep intact the inspiring passion of our grandparents, tradition and quality. Our pasta factory, one of the smallest in Italy, can boast the "traditional" appellation for the processing methods followed. We choose the best Italian durum wheat semolina and slowly knead it with cold water; we use circular bronze dies and dry at low temperatures (no more than 35 degrees centigrade) in the now historic Giorgetti dryers, in which the dough is enhanced in all its characteristics. The result is a pasta in which the flavor of the wheat is clearly perceived, with a good resistance to cooking and which, thanks to its exceptional porosity, allows it to blend harmoniously with any seasoning.
