The process includes stone grinding the flour, bronze drawing and slow drying at low temperatures, which give the pasta a rough and porous texture, ideal for holding condiments. Preparation
For a 65g portion:
Bring 1.5 litres of water to the boil.
Salt with 8g of coarse salt (optional).
Cook for 5-7 minutes over medium heat, without stirring during the first few minutes.
Drain and season.
