Classic Italian espresso has always spoken the language of blending: Arabica for aromatic complexity, Robusta for body and crema. But what happens when this centuries-old formula meets the obsessive selection of specialty coffee? Italiano is born, the blend that Picapau has created by reversing the paradigm: the same traditional 80/20 balance, the unprecedented quality of the individual components.

Tradition without nostalgia

Italian espresso is a cultural heritage that deserves respect, not museum-like status. Italiano begins with a simple yet revolutionary insight: what if we applied the same traceability, selection, and processing criteria to the quality standards of traditional blends that we apply to single-origin specialty coffees?

The result is a blend that doesn't hide its components behind aggressive roasting or opaque blends, but rather enhances them. Each origin is selected to contribute specifically to the architecture of the final profile, each percentage calibrated to maximize overall harmony.

Blend Components: 80% Arabica Specialty - Brazil and Peru

The Arabicas that make up Italian come from two complementary origins:

  • Brazil: Contributes natural sweetness, a rounded body, and notes of chocolate and dried fruit. The Brazilian coffees selected by Picapau for this blend are grown on farms that practice sustainable farming practices, with selective hand-picking and meticulous processing. The naturalness of the dark chocolate and toasted hazelnuts that characterize the best Brazilians becomes the backbone of the aromatic profile.
  • Peru: Brings liveliness, a delicate yet noticeable acidity, and cleanliness in the cup. The Peruvian coffees used in the blend come from Rainforest Alliance and Fair Trade certified cooperatives, grown at high altitude in the Cajamarca region. They contribute a freshness and brightness that keep the blend from becoming flat or monotonous.

20% Fine Robusta Conillon - Fazenda Venturim, Espirito Santo (Brazil)

The choice of Robusta is crucial. Picapau doesn't use low-quality commodity Robusta (those that produce notes of burnt rubber and aggressive astringency in the cup), but a Conillon selected by Fazenda Venturim in the Espirito Santo region of Brazil.

Conillon is the Coffea canephora (Robusta) variety grown in Brazil, characterized by a superior organoleptic profile compared to standard Robusta: less bitterness, more natural sweetness, notes of bitter cocoa and toasted cereals. It gives the blend:

Body: Full, almost creamy texture, which supports espresso extraction
Cream: Persistent, dense, hazelnut-colored with reddish reflections
Caffeine: Higher content (1.7-4% vs 0.8-1.4% of Arabica) for those looking for intensity
Soluble solids: Greater extraction of compounds, ideal for moka pots and espresso
Balance: Structural backbone that holds the Arabica components together without overwhelming them
One of Italiano's secrets is the separate roasting of the components. Arabica and Robusta have different densities, water content, and thermal behavior. Roasting them together would compromise the quality of at least one of the two.

Picapau roasts each origin separately, developing specific curves that enhance positive characteristics and eliminate defects. Only after optimal roasting are the coffees blended into their final proportions. This method—more expensive and labor-intensive—ensures that each component expresses its full potential.

The medium roast is calibrated to preserve the sweetness and aromatic complexity of the Arabica, while developing the body and chocolatey notes of the Robusta without creating bitterness or burnt aromas.

Sensory Profile: Italian Balance

In the cup, Italiano expresses the balance that gives it its name:
Acidity (1/5): Delicate, barely perceptible. Not intrusive, not aggressive. It supports the profile without dominating it—exactly as it should be in a classic Italian espresso.
Sweetness (2/5): Moderate, natural. Notes of milk cocoa, toasted hazelnut, and smooth caramel. Not the overt sweetness of a washed Ethiopia, but that roundness that makes espresso drinkable without sugar.
Body (5/5): Full, enveloping, persistent. Robusta Conillon makes its presence felt with a creamy texture that fills the palate. As an espresso, the tactile sensation is almost oily, velvety.
Complexity (2/5): Medium, accessible. This isn't a coffee that requires a long sensory decoding—it's instantly recognizable, reassuring, familiar. But behind the apparent simplicity lies layering: dark cocoa on the opening, dried fruit (almonds, hazelnuts) in the body, and a lingering toasted grain finish.

Dominant Notes:

  • Dark cocoa and bitter cocoa
  • Toasted dried fruit (hazelnuts, almonds)
  • Toasted cereals
  • Persistent and clean aftertaste

Who is it best suited for?

This blend reaches a specific but broad audience:

  • Advanced traditionalists: those who love classic Italian espresso but are looking for a qualitative upgrade without radical upheavals
  • Specialty newbies: those new to specialty coffee but find filtered single-origins too "acidic" or "fruity"
  • Daily consumers: those who drink 2-4 coffees a day and are looking for consistent quality without palate fatigue
  • Espresso purists: those who believe espresso should have body, cream, and persistence—not floral notes of jasmine.

Recommended Extraction

Espresso (preferred method):

  • Dosage: 18-20g per double
  • Yield: 36-40g in cup (ratio 1:2)
  • Time: 25-30 seconds
  • Temperature: 92-94°C
  • Pressure: 9 bar
  • Result: Dense hazelnut cream, full body, long persistence

Moka:

  • Fill the filter without pressing
  • Water just below the valve
  • Medium-low heat (gradual extraction 4-5 minutes)
  • Leave the lid open to monitor
  • Turn off when the coffee starts to bubble
  • Result: Less crema than espresso but full body and pronounced sweetness

French Press (alternative use):

  • Ratio: 60g/liter
  • Water: 93°C
  • Infusion: 4 minutes
Result: Heavy body, low acidity, velvety texture

Conservation

Store in a cool, dry place, away from heat, direct light, and strong odors (coffee easily absorbs external aromas). After opening, carefully reseal the container with the valve and consume within 3-4 weeks to preserve optimal aromatic freshness.
