Rinci 's Mustard and Paccasassi is a bold and aromatic creation that demonstrates the mastery of young artisans from the Marche region. They have successfully combined the pungent, bold character of artisanal mustard with the unmistakable aroma of Paccasasso (sea fennel).

Paccasasso del Conero (Slow Food Presidium) is the true secret of this sauce: its fleshy leaves, with a savory, salty flavor and distinct citrus notes , transform a simple mustard into a unique gourmet condiment. Made with yellow mustard seeds, extra virgin olive oil, and spices, this sauce is perfect for those who love intense, sophisticated flavors. It's the ideal choice for elevating your dishes, bringing the aromas of the sea and land of the Conero Park to the table.

Gourmet Pairings

The balance between the liveliness of mustard and the aromaticity of paccasasso makes it incredibly versatile:

With Meat: It's the perfect pairing for grilled sausages and ribs, hot dogs, and hamburgers. Also try it with meat tartare and boiled or poached meats.

With Fish: Gives a touch of absolute uniqueness to anchovies in oil, smoked salmon and tuna or to raw fish.

Vegetables and Side Dishes: Use it to flavor steamed or raw vegetables, adding depth and character. It's also fantastic with poached eggs.

Rinci is an artisanal company from the Marche region, based in the Conero Park, specialized in the reinterpretation of traditional flavors through the production of vegetable preserves and sauces. Founded in 2015, the company stands out for an approach that combines innovation and respect for local gastronomic traditions. The distinctive element of the production is represented by the "Paccasassi del Conero", wild sea fennel, included in the Ark of Taste of the Slow Food Foundation. This spontaneous plant, typical of the Conero Riviera, is grown within the Natural Park, respecting local biodiversity. Rinci's production is characterized by the attention to the selection of raw materials and the enhancement of local products.
