Saba is a production of the grapes that color the vines grown in the gentle hills around Reggio Emilia.
The saba of the Ferretti Corradini vinegar factory is characterized by a great attention and selection of exclusively local raw materials. Slow cooking of the musts results in the evaporation of about two thirds of the initial volume.
There is a syrup which, especially in past times, was the real daily bread for all the peasant families who saw this syrup as the ideal sweet dressing for various preparations.
Immediately perceptible on the palate is its characteristic sweet taste combined with the aromas of musts. This last aspect makes Saba ideal for accompanying cheeses, but also and above all sweets, from yogurt to ice cream up to the classic and evergreen panna cotta.
In the hot summer season, it can be added to water to create a tasty and thirst-quenching drink. The only ingredient present in Saba Ferretti Corradini is the cooked must of the Reggio grapes. There is no addition of chemical substances such as thickeners, caramel or sulphites, a natural product with an ancient flavor.
