Rigatoni are obtained by processing organic broad bean flour, stone ground and mixed with mountain water. The low-pressure bronze drawing gives the pasta a rough and porous surface, ideal for holding the sauces. The slow drying at low temperature preserves the nutrients of the broad beans, rich in vegetable proteins, fibers, mineral salts and B vitamins.
The broad bean, a typical food of the Italian peasant tradition, is a precious legume, a source of fiber, proteins, carbohydrates, vitamins C and B, calcium, magnesium, phosphorus, potassium, folates and iron of vegetal origin.

Preparation
For a 65g portion:
Bring 1.5 litres of water to the boil.
Salt with 8g of coarse salt (optional).
Cook for 5-7 minutes over medium heat, without stirring during the first few minutes.
Drain and season.
